Happy Spring to you ALL. I's a beautiful sunny Sunday, a great day for outdoor activities. This morning I dusted off my mountain bike and took off on an early morning ride.

Here is a speedy, flavorful vegetable recipe your family will enjoy! Ginger root is a well known digestive stimulant, weight loss aid and overall body tonic. Add it to your favorite recipes this spring. 

Ginger Carrots                                serves 2
1 TBSP unsalted organic butter
1/2 pound julienne carrots
2 tsp minced fresh ginger root
dash freshly ground pepper and sea salt
1/4 c chopped cilantro (optional but nice )
Heat butter in saucepan. Add carrots and ginger and cook for 5-7 minutes. Sprinkle with salt and pepper (or) herbs. This speedy vegetable dish tastes great with white fish or grilled chicken.

What's for Supper Tonight?- Recipe for California Chicken Stir Fry

Are you looking for a quick and healthy supper recipe? This recipe promises to be a hit amongst family and friends.  Packed full of  protein, fibre and nutrients, this dish delivers a healthy meal in minutes. Stir fry is a favorable method of cooking for weight loss because the nutrition stays within the dish. Traditional stir fry recipes use oil for quick cooking, while this dish uses fat free salad dressing. Try it tonight for supper. This recipe is compliments of Rachelle Wood Nutrition.

Simple California Chicken Stir Fry          serves 2

8 oz  chicken breast, cooked
4 TBSP low fat Catalina salad dressing
1 tsp grated ginger root
1 bag of California Style  frozen vegetables

Heat stir fry pan on medium heat. Add salad dressing and ginger and cook 2 minutes. Then add frozen vegetables and cook until tender stirring often. Then add chicken and cook 3 more minutes. Divide into to servings and enjoy as a no starch supper !

Free Cereal Tastes Great

Have you tried the new Kashi cereals yet? Last week I enjoyed the Toasted Berry Crisp for FREE! Earlier this year Kashi endorsed a free cereal campaign  online and on TV ( thanks Susan Foster for sending me the link).  Participants were asked to visit Kashi's website, pick a cereal to sample, then answer a short questionnaire. According to the company, participants should receive the sample cereal box in the mail in 2-4 weeks.  

I chose to sample a brand new flaked cereal, filled out the necessary paperwork and waited for the postman to arrive. In less then 2 weeks I found my sample box in my post office box.  

As a Holistic Nutritionist I'm always encouraging my clients to read nutritional information and ingredients lists before consuming. According to the box this cereal is naturally sweetened, contains 7 whole grains, cranberries and wild blueberries. Sounds lovely! A 51 gram serving reports: 210 calories, 4 grams fat, 130 mg sodium, 8 grams fibre, 13 grams of sugar and 9 grams of protein. With numbers like that this cereal should keep you full for a while.

I approved the products nutritional information and opened the box. The cereal smelled sweet and contained a multitude of shapes and textures ( long sticks, clusters, flakes, dried fruit ). Actual serving size was just under 1 cup.

So how did it taste? DELICIOUS! I'm not someone who eats cereal often, but I would buy this one for sure. Not only did the taste satisfy my taste buds, but the high protein and fibre content satisfied my ravenous morning appetite. This cereal is high in sugar, but is sweetened naturally with cane sugar. It contains: wheat, soy and sesame products so those with allergies should be careful. 

 

Looks like Kashi is passing out even more healthy samples online. They also have tasty recipes. Why not give them a try?

Healthy Recipe to Share – Curried Cauliflower Soup    serves 4


I usually find cauliflower bland, but the curry in this recipe heats things up a notch. Cauliflower is low in carbohydrates and packed full of vitamins and minerals. Serve this soup as a substitute for mashed potatoes or as a side dish at meal times. SO simple and tasty, try it tonight. This recipe is compliments of Rachelle Wood Nutrition. 

1 TSBP olive or hemp oil
1 cup chopped onions
1 cup copped celery
1 TBSP minced ginger
2 cloves garlic minced
½ tsp cumin seeds
1 TBSP curry powder
2 cup vegetable broth
2 cup water
3 cup chopped cauliflower
1 cup chopped carrots

In a large pot heat oil on medium heat. Add onion, celery, ginger, garlic and cumin seeds, stirring until softened, 2 minutes. Add curry powder. Then add broth and water and bring to a boil. Add cauliflower and carrots. Reduce heat and simmer for 30 minutes. May serve as is or I prefer pouring ½ the soup in to a blender on high for 2 minutes.
