Here is a quick recipe to prepare for supper that everyone will love, especially kids. Quesadillas are considered Mexican food and consist of a flour tortilla filled with cheese, meat and veggies. They are traditionally pan fried in oil, but tin this low fat version they are baked in the oven. Try this recipe tonight for supper, your family will thank you!
Quick Chicken Quesadillas serves 4
4- 10" whole wheat tortillas wraps
1 pound pre cooked white chicken pieces
1 chopped green pepper
1 chopped red pepper
1 chopped red onion
2 tsp low sodium chicken spice
2 diced tomatoes
12 TBSP fat free salsa
4 TBSP shredded light cheese
Combine cooked chicken, vegetables in a saucepan over medium heat. Cook for 5 minutes, then and add 4 TBSP of salsa. Place tortillas on a baking sheet and top each with 1 TBSP salsa. Top each tortilla with vegetable and chicken mixture. Sprinkle 2 TBSP light shredded cheese on each one and fold in half. Top each quesadilla with 1 TBSP salsa and diced tomatoes. Bake in preheated oven, 350 for 10 minutes. Serve with some extra veggies on the side and enjoy!
