This is a quick and easy Chinese inspired dish to make for the entire family. Full of fiber and packed with protein, this dish is a healthy alternative for the very high in fat and salt restaurant Chinese food. Most kids enjoy this recipe, as well as adults. It is a complete meal when served with brown rice. To get your children to eat brown rice, serve the chop suey over it ( they will think the brown comes from the soy sauce!)
Chicken Chop Suey serves 4
1 pound chicken breast, cup into strips
3 tablespoons low sodium soy sauce or Bragg’s
2 onions, chopped
2 cloves garlic, chopped
1 tablespoon olive, hemp or canola oil
6 ribs celery, chopped
1/2 pound sliced fresh mushrooms
1/2 pound sliced fresh mushrooms
4 teaspoons cornstarch
1 cup water or organic vegetable broth
2 cups bean sprouts
Combine cut chicken and soy sauce in a plastic bag and marinade for 1/2 hour in the fridge. In a large skillet heat oil on medium heat. Add onions and garlic and stir fry for 2 minutes. Add chicken and stir fry 3 minutes. Mix cornstarch and water. Pour over chicken mixture. Then add celery, mushrooms and peppers. Cook until veggies are tender. Add bean sprouts and cook covered for 1 minute. Serve over cooked brown rice. Enjoy this meal for lunch or supper.
