This is a simple recipe to prepare that tastes time consuming! The vegetables and salsa give the chicken a nice flavour with very little fat. This is a high fibre meal when you prepare it with whole wheat angel hair pasta, however a traditional recipe would call for white pasta. Kids especially enjoy this recipe! Angel Chicken serves 4
1 large can low sodium stewed tomatoes
2 cloves garlic, crushed
2 cups zucchini, diced
1 yellow pepper, chopped
2 teaspoons dried basil
1 teaspoon dried oregano
4 boneless, skinless chicken breasts
8 tablespoons fat free salsa
4 tablespoons grated fresh parmesan cheese
Mix tomatoes and garlic in a small bowl. Pour into a large casserole dish. Layer zucchini, peppers, and spices over tomato mixture. Lay chicken breasts over mixture. Place 2 TBSP salsa over each chicken breast. Bake uncovered at 350 for 1 hour or until chicken is no longer pink. Cook pasta according to directions. Measure 4 -1/2 cup servings. Place chicken breast over pasta servings. Top each with remaining vegetable mixture. Place 1 tablespoon of parmesan cheese over each serving, serve and enjoy!
