Mediterranean Haddock Fillets serves 4
1/3 cup onion, chopped
1 clove garlic minced
2 teaspoons olive oil
1 large can of Italian diced tomatoes, drained
2 teaspoons fresh basil, minced
1 pound haddock fillets
4 tablespoons light feta cheese, crumbled
In a saucepan sauté onion and garlic in oil until tender. Add tomatoes and basil. Bring to a boil. Reduce heat to simmer, uncovered for 5 minutes. Broil fish for 5-6 minutes. Top each fillet with the tomato mixture and 1 TBSP feta cheese. Broil for 5 more minutes. Serve and enjoy this simple to prepare dish. Rachelle likes to serve this dish for supper with a Greek salad on the side. This recipe also tastes great by topping each fillet with 1 tablespoon of chopped fresh olives before serving.
