What’s for Supper Tonight? - Recipe for Beef Kabobs

It’s finally BBQ season, so why not enjoy a healthy BBQ kabob? This recipe is simple to prepare and delicious to consume. A sweet orange and garlic sauce tenderizes the beef and vegetables to almost melt in your mouth. This recipe can be substituted with chicken and any of your favourite vegetables. So fire up the BBQ and enjoy this healthy dish! This recipe is compliments of Positive Change Nutrition, www.rachellewood.ca

Marinated Beef Kabobs   serves 4  

1 small navel orange

3/4 cup orange juice

2 TBSP teriyaki sauce

1 TBSP Dijon mustard

2 tsp honey

2 garlic cloves, minced

fresh ground pepper

1 pound beef sirloin steak, cut into strips

10 large mushrooms

2 small onions, cut in 4

1 green pepper, chopped

Peel orange and grate 1 TBSP of orange rind. Separate orange and set aside. In a bowl combine grated peel, oj, teriyaki sauce, mustard, honey, garlic and pepper. Mix well to combine for marinade. Place beef strips into a Ziploc bag. Pour over 1/2 the marinade, seal bag and let sit overnight in the fridge. Place prepared vegetables into a Ziploc bag and cover with remaining marinade. Let sit overnight in the fridge. The next evening prepare kabobs by threading metal kabobs with meat and vegetables. Cook on an indoor grill, BBQ, or oven until done.
