What’s for Supper Tonight? - Recipe for Strawberry Spinach Salad

Here is a healthy, low fat recipe the entire family will enjoy! Spinach is nutritious and full of iron, magnesium and fiber. If your children have a hard time eating spinach, you can substitute romaine lettuce. The salad dressing is slightly hot (because of the curry powder) which creates a wonderful taste combination of spicy and sweet. This recipe is quick to prepare and is best served with BBQ chicken or fish on the side for supper. This recipe is compliments of Positive Change Nutrition, www.rachellewood.ca.

 Strawberry Spinach Salad  serves 2 

4 cups spinach, torn and washed

1 tomato, seeded and chopped

½ cup cucumber, chopped

¼ cup green pepper, chopped

4 mushrooms, sliced

½ cup sliced strawberries

3 TBSP slivered almonds

Dressing

2 TBSP apple cider vinegar

2 TBSP balsamic vinegar

1 TBSP honey

2 tsp Dijon mustard

1 tsp curry powder (optional)

In a large bowl combine vegetables and strawberries.  In a small bowl combine dressing and mix well. Pour almonds and dressing over salad and serve. You can substitute any berry or nut/seed into the recipe by using the same serving size. It is perfect for lunch or supper; try it tonight with your family!
