What’s for Supper Tonight?-Recipe for Grilled Shrimp Spinach Salad

This tasty salad recipe combines succlent shrimp with crisp spinach and seasonal garden vegetables. With a hint of fresh cilantro, this recipe is sure to please any dinner party guest. This salad can be a meal of its own, or used as a side dish for supper. This recipe is courtsy of Positive Change Nutrition, www.rachellewood.ca .

Grilled Shrimp Spinach Salad        serves 3

½ cup low fat Italian dressing

½ cup lime or lemon juice

1 pound medium cooked shrimp 

 2 medium red peppers, chopped

1 medium onion, chopped

2 stalks celery, chopped 

2 grated carrots

2 TBSP chopped fresh cilantro

6 cups fresh baby spinach

Pour dressing and lime juice over shrimp. Allow to marinade 1 hour in the fridge. Wash and arrange spinach in bowl. Add remaining chopped veggies. Top with shrimp. Serve and enjoy this simple supper recipe!
