This is a tasty recipe I love to cook in the summertime using fresh herbs from my parent’s garden. Salmon is a highly nutritious fish, praised for its high essential fatty acid content. The strong taste mixes well with this garden fresh herb rub. The last time I cooked this recipe on the BBQ and it was delicious. Try it the next time your entertaining outdoors and serve it with a delicious garden salad and marinated veggie kebobs. This recipe is compliments of Positive Change Nutrition, www.rachellewood.ca

Grilled Salmon with Fresh Herb Rub   serves 4

1 pound fresh salmon fillets

1/2 cup fresh oregano, chopped

1/2 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1 clove garlic, minced

1 TBSP lemon juice

2 tsp olive oil

freshly ground pepper

Combine fresh spices, garlic, and onion in a mini food processor. Cover and process until chopped. Transfer into a small bowl and stir in lemon juice, oil and pepper. Coat both sides of the salmon with the rub. Cook the salmon on the BBQ or indoor health grill. You may also broil or poach. Serve and enjoy this simple summertime recipe!
