This recipe is a little hot and combines flavours mostly found in Itlalian cooking. Here is am easy vegetable side dish that is sure to please all guests. Impress them some more by using fresh zucchini and tmatoes from your own garden. This recipe tastes great with BBQ chicken or fish. Hot and Fiery Zucchini and Tomatoes serves 4
1/2 tsp hot pepper flakes
1 minced clove garlic
1 TBSP organic olive oil
1 28 oz can diced tomatoes, or 3 chopped
1/2 tsp dried basil and oregano
A dash or sea salt and fresh ground pepper
2 chopped medium sized zucchini
Saute first 3 ingredients over medium high heat. Stir in rest of ingredients except zucchini and cook for 10 minutes while bringing to a boil. Reduce heat and add zucchini, cook another 5 minutes. Serve and enjoy as a side dish for supper.
