Broccoli is one of the healthiest vegetables to include in your diet. It is packed full of antioxidants, fibre and minerals. Since this recipe uses steamed broccoli it has a higher nutrient content than if the broccoli was boiled. Here is a simple steamed recipe to enjoy as a side dish for supper. It tastes great with grilled chicken or fish. The recipe is vegan, and wheat/ dairy free. This recipe is compliments of Rachelle Wood Nutrition, www.rachellewood.ca

Broccoli Italliano   serves 6   

5-1/2 cups broccoli florets

½ cup thinly sliced green onion

4 teaspoon of extra virgin olive oil

4 garlic cloves, minced

2 TBSP lemon juice

¼ teaspoon pepper

4 large fresh mushrooms, sliced

In a large saucepan, bring 1 inch of water to a boil. Place broccoli in a steamer basket over water; cover and steam for 4-5 minutes or until crisp-tender. In a non-stick skillet, cook onions in oil over medium heat for 1 minute. Add garlic; cook 30 seconds longer. Reduce heat. Add broccoli, lemon juice, and pepper; toss to coat. Remove from heat; let stand for 5 minutes before serving. Top with fresh mushrooms and enjoy!
