What’s for Supper Tonight?-Recipe for Chicken Cacciatore

I can’t believe we had our first hail storm in PEI this morning. Guess that means it’s time to cook up some comforting casseroles to beat off the cold temperatures. This recipe is sure to please your family and takes little time to prepare. I find that my in office weight loss clients who try it, often make it again and again. Chicken Cacciatore   serves 4

 4 boneless skinless chicken breasts

1 TBSP olive oil 

2 cloves garlic, minced

2 cups mushrooms, chopped

1/2 cup green pepper, diced

1/2 cup green onion, chopped

1 large can sodium reduced crushed tomatoes

1 can tomato paste

2 tablespoons fresh oregano

1/2 cup dry red wine (or beef broth)

3 cups cooked whole wheat pasta

Heat oil in saucepan on medium heat. Add chicken and brown. Then add garlic, mushrooms, green pepper and onions. Cook, stirring often for 2 minutes. Add tomatoes and tomato paste, seasonings and wine. Simmer, covered for 20 minutes. Cook pasta until tender but firm. Pour into saucepan, stir and serve. This recipe is great for a dairy free meal plan. This recipe is not recommended for gluten free or vegetarian meal plans.

Rachelle likes to serve this recipe for supper, and it tastes great re-heated for lunch the next day. Tomatoes and peppers are full of vitamin C which increases immunity and may help to prevent colds and flus.
