Tasty Vegetarian Chili
2 cans red kidney beans, drained and washed
2 large cans diced tomatoes, no salt added
1 cup filtered water
½ cup pasta sauce
3 stalks of celery, chopped
3 cloves of garlic, chopped
1 onion, chopped
2 green or red pepper, chopped
1 package of Veggie Ground Round (vegetarian hamburger alternative)
1 ½ tablespoons chili powder (more if you like it hot)
1 teaspoon sea salt
½ teaspoon cayenne pepper
1 teaspoon black pepper
Drain and rinse beans. In a large saucepan combine tomatoes, pepper, sauce, onions, garlic, and celery on medium heat. Cook for 3 minutes. Reduce heat to simmer. Stir in spices, then beans. Add broth powder Add veggie ground round to saucepan. Cover and let simmer for 45 minutes. Serve with a multigrain roll on the side and enjoy this classic comforting recipe.
