Tis the season for dietary indulgance, otherwise known as stuffing yourself until you can eat no more. Loading up on excess sugar and calories by day, while tossing and turning all night. Holiday cake may seem sweet and innocent but what does it do inside your body? Excess fat and calories can contribute to so much more than just weight gain (think diabetes, thing high cholesterol). This year I wanted to share a low fat holiday cake recipe with my clients (ok so I’m not the dietary grinch), then I remembered a recipe one of last years weight loss clients gave me.
This easy and delicious low fat gingerbread cake leaves a sharp but sweet taste in your mouth. A pleaseue to eat, this holiday cake will also spice up your kitchen. Enjoy a square of gingerbread cake with a little confectioner's sugar sprinkled on top, or by topping with 1 ½ cups applesauce and ½ cup walnut pieces. Holiday Gingerbread Cake
• 1 1/4 cups all-purpose flour
• 1/2 cup sugar
• 1 tsp cinnamon
• 1 tsp ground ginger
• 1/2 tsp baking soda
• 1/4 cup organic canola oil
• 1/2 cup molasses
• 1/2 cup skim milk
• 1 egg, lightly beaten
Preheat oven to 350 degrees. Coat a square baking pan with nonstick cooking spray. Combine flour, sugar, ginger, cinnamon and baking soda in a small bowl. In a large bowl, stir together oil, molasses, milk and egg. Add flour mixture to wet ingredients and mix well. Pour into baking pan and bake for 25 minutes at 350. This recipe can be made gluten free by substituting 1 ¼ cup all purpose flour with gluten free flour mixture. Cut into 16 squares. Each square has 140 calories and 3 grams of fat.
This cake is low in fat and high in flavour. It is the perfect end to your Christmas dinner. Plus the ginger can improve the digestion of your meal. If you must eat cake, this is a healthier one to choose (sorry Grammy’s plum pudding). Enjoy serving it to your family and friends over the holiday season.
