Who doesn’t love homemade lasagna? Infact when I think about it, memories of my youth come to mind. My mother made the best in town, whick at that time included lots of hamburger, white noodles and full fat cheese. Oh how the times have changed, (and no wonder I’m now a Holistic Nutritionist).
Karen arrived for her weight loss check-up 2 weeks ago and presented me with this recipe.
It’s a vegetable lasagna her 3 young boys would eat and actually enjoy. This recipe is packed full of muscle building protein and antioxidant rich vegetables. Low in fat and high in fiber, this recipe promises to fill you up and wil satisfy even the heftiest of appetite.
Vegetable Lasagna
9 whole wheat lasagna noodles
1 jar Healthy Request pasta sauce
2 cloves garlic, minced
½ red oinion
3 tsp Italian seasoning
1 package frozen chopped spinach
I cam mushrooms
1 cup shredded carrot
1 16oz containor far free cottage cheese
1 cup shredded mozzarella cheese
¼ cup light parmasen cheese
Cook noodles according to package directions. In a small bowl combine sauce, garlic, onion and seasoning. In a medium bowl combine broccoli, carrot, cottage cheese and parmasean cheese. Mix well. Pour ¼ cup tomato sauce mixture on bottom of a sprayed 13X9” pan. Place 3 noodles over. Pour ½ spinach cheese mixture and ½ cup sauce. Place 3 noodles over and repeat. Place remaning 3 noodles on top with remaining tomato sauce and mozarella cheese. Bake for 45 minutes at 350. Let cool for 15 minutes prior to serving.
The problem with living alone and making lasagna is all the leftovers. Knowing how much I love this dish, I decided to make the recipe for a potluck. Then I could get my friends opinions about the dish. They all loved it and agreeded it was very filling. The vegetable/ cottage cheese layer was creamy and the entire dish was very flavourful. This recipe was a HIT!
