If you’re looking for a simple eye catching dish the whole family can enjoy then this recipe is a great fit! Lean poultry, sweet pineapple and crisp peppers combine to create a dish worth talking about. Kabobs are simple and quick to prepare and taste great with any side dish. Pineapple Turkey Kabobs    makes 6 servings

1 1/2 pounds boneless, skinless, turkey breast (or chicken)

2 large red bell peppers

2 cups fresh pineapple chunks 

½ cup rice wine vinegar

¼ cup pickled ginger 

2 tsp chopped garlic

½ tsp black pepper

Brown rice (optional)

Soak 12 wooden skewers in water at least 20 minutes. Preheat oven to 400 degrees.

Cut turkey into bite size pieces and place in re-sealable food storage bag. Cut bell peppers into bite size chunks. Place in bag. Add pineapple, vinegar, pickled ginger, garlic, and black pepper to the bag with turkey. Seal bag, turn several times to coat all ingredients and chill for 20 minutes. Spray 9x11x2 inch baking pan with non-stick cooking spray. Assemble 6 skewers by threading pieces of bell pepper, turkey, ginger slice, and pineapple onto each. Place in pan and cover with aluminum foil. Bake 20 to 25 minutes. Serve with rice if desired.
