This salad recipe reminds me of summer, though you should enjoy it all year round.  So cheap and easy to prepare- It’s simple and tasty! Chickpeas are a great source of protein, magnesium and iron. Enjoy alone or on a bed of mixed greens for a complete meal. This summer time salad recipe is compliments of SeeResults.

Easy Chickpea Salad

1 can no salt added chickpeas rinsed and drained
1 chopped green onion
½ cup chopped bell peppers
½ cup chopped red peppers 

Dressing
2 tbsp olive oil
1 ½ tbsp mustard
2 tbsp lemon juice
1 tsp dried thyme
1 tsp dried dill
Pepper to taste

In a medium bowl, combine the dressing ingredients and whisk.  Add the chickpeas, green onions, and bell peppers and stir well.  Refrigerate and enjoy! Tastes even better the next day. Who doesn’t love leftovers salad on a hot sunny day?
